Homemade Baking Powder

To make really great homemade biscuits, you need great ingredients. Flour of course, my favorite is White Lily flour for my buttermilk biscuits, homemade butter and the traditional buttermilk. I never even thought about the baking powder until I found this recipe  for homemade baking powder from Chef Scott Peacock and Edna Lewis on Bonappetit.com. He swears that the homemade baking powder is so much better.

I decided to try out my recipe using the store-bought version and the homemade version to see if there really is a difference in taste. To my happy surprise there is, the biscuits made with the homemade baking powder had no after taste. Again, proof that homemade is better.

This recipe is so easy. Ready!

Homemade Baking Powder

Recipe from Chef Scott Peacock and Edna Lewis

Ingredients:

1/4 cup cream of tarter

2 TB baking soda

Directions:

Sift all of the ingredients together three times, and transfer to a clean, tight-sealing jar. Store at room temperature, away from sunlight, for up to six weeks. Now you can have fresh baking powder whenever you need it and no chemical after taste like the store bought versions.
